Ficelles are long, thin breads that get their name from the French word, “ficelle,” which means “tie” or “string.” Excellent for individual sandwiches, or a snack on the go, the ficelle has the same characteristics of it’s more sizable counterpart, the baguette – the thin, crisp crust, the light and airy interior and the soft and chewy crumb.

Benji’s ficelles are simply beautiful – slender, tapered and scored on the bias with rounded ends. He finishes them in a suite – one is kept au naturel, the other two with poppy and sesame seeds.
