With the constant baking of the Canele molds we start to see them change in color. We have to fry the molds every 5 baked to ensure they will bake the Canele perfectly. Last night was the third fry and we saw the biggest change in color. We are sad to see the copper diminish but in the end it’s the purpose it was created for. The Canele release and look beautiful in the end so it’s worth it.
