We are so lucky to be using French Butter Pears from Nancy at Middleton Farms in Healdsburg, California. They are crisp and juicy when eaten raw and have a sweet creaminess after we poach them in bergamot and vanilla syrup.


We serve our French Butter Pears in the classic style of Belle Hélène – accompanied by the richest Tahitian vanilla bean ice cream, Valrhona Araguani chocolate and fragrant violet croquante.
