Pan al Nero di Seppia

Today Alen made something I’ve never seen or tasted before in my life- Pan al Nero di Seppia, or Squid Ink Bread.

The dough itself was black. When it came out of the oven, it was even more concentrated in color- and the contrast of the white rye flour on the bread’s exterior surface was just incredibly and shockingly beautiful.

When we tasted the bread from the oven, we were very surprised at how complex the flavor was. It tasted just like grilled squid- which should not have been a surprise, given the 4% addition of the ink.
